1 .Place the bacon in a 10-inch (25 cm) nonstick skillet and add water. Simmer over high heat and cook, stirring occasionally, until the water has evaporated and the bacon is well cooked and crisp, about 15 minutes. Transfer the bacon to a small bowl, but leave the fat in the pan.
2 . Add butter to the bacon fat and heat over high heat until the foam has decreased and the butter begins to brown. Add the ramps and cook, stirring and stirring occasionally, until golden brown. Season to taste with salt and papper. Transfer the ramps to the bowl with bacon.
